I like to split my ingredients into two parts for this recipe.
Mixed berries filling
- 2 cups (400 g) of fresh mixed berries (you can also use frozen berries if off-season)
- 2 tsp of cornstarch (you can substitute for 4 Tbsp of chia seeds)
- 1 Tbsp of lemon juice
Crumble mixture base
- 1 cup (200 g) of old-fashioned oats
- 1 cup (200 g) of almond flour (if you’re not bothered about gluten-free flour, you can use all-purpose flour)
- ⅔ cup (134 g) of coconut oil cubed (you can substitute for vegan butter)
- ¾ cup (150 g) of brown sugar (you can substitute with coconut sugar)
- 1 tsp of baking powder
- 1 tsp of ground cinnamon
- ¼ tsp of sea salt

Step 1: make the mixed berries filling
Place the fresh or frozen fruit in a saucepan. Heat over medium heat until the fruits begin to break down.
Add the cornstarch and lemon juice and stir until fully combined. Set it aside and let it cool completely.
Preheat the oven to 350 degrees F (180 C)
Step 4: make the crumble mixture
Combine the gluten free flour, oats, brown sugar, ground cinnamon, baking powder, and salt in a large bowl.
Add the coconut oil and mix together until it turns into large lumpy wet sand.
Pour half of the crumble mixture into a baking pan with parchment paper and flatten with your hands.
Spread the berry filling evenly across the crumble, then cover it with the remaining crumble mixture.
Bake for 30 minutes until golden brown, remove and let cool completely before cutting into crumble bars.
