This Sweet and Sour Asparagus recipe is a simple and versatile recipe that can be served cold or right out of the oven.
It’s a great addition to any meal, whether it’s a picnic or a barbecue. Fresh asparagus is perfect for those who are trying to lose weight, improve digestion, and lower blood pressure, as it’s a great source of vitamins A, C and K, fiber and folate.
The picky eaters in your family will love this sweet-and-sour asparagus recipe. I usually serve these lovely green asparagus spears as a side dish with potato salad and barbequed chicken.
- 1 bunch of fresh asparagus, trimmed
- 2 tbsp virgin olive oil
- 2 tbsp of raw honey
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp hoisin sauce
- 2 minced garlic cloves
- Pinch of salt and pepper to taste
Sweet and Sour Asparagus Recipe
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Sprinkle the fresh asparagus with the olive oil and arrange them in a single layer on the prepared baking sheet.
Step 3: Vinegar mixture
To make the vinegar mixture, add the raw honey, soy sauce, rice vinegar, hoisin sauce, garlic, salt, and pepper in a small bowl and whisk together.
Brush the green asparagus spears with the vinegar mixture.
Cook asparagus for 8-10 minutes, or until they are tender and caramelized.
Remove from the oven. You can either serve your sweet and sour asparagus hot or let them cool down to room temperature.
If you’re not a fan of the sweet and sour sauce, you can also try a much simpler recipe. Just brush the asparagus spears with some olive oil and minced garlic clove, and sprinkle with a little salt and pepper to taste. Roast in the oven for 10 minutes or until slightly brown and voila, job done!
