Salmon Avocado Pasta Salad

Ingredients

  • 8 ounces of pasta of your choice
  • 2 salmon fillets
  • 2 ripe diced avocados
  • 3/4 cup of mayonnaise
  • 1 cup of sliced scallions (green onions)
  • 1 small sliced bell pepper
  • 1/4 cup chopped fresh parsley or cilantro
  • 3 limes (grated rind and lime juice)
  • 1/2 cup (114 g) of cherry tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1.7 oz (50 g) of rocket salad leaves

Salmon Avocado Pasta Salad Recipe

Step 1

Bake the 2 salmon filets in a preheated oven at 350 F (175 C) for 8 to 10 minutes

Step 2

While the salmon filets are baking, drop the pasta into a pot of boiling water and cook according to the package directions

Step 3

Once the pasta is cooked, drain it, and run it under cold running water until it is completely cool

Step 4

Add the past into a large mixing bowl, and combine the green onions, avocados, sliced bell pepper, diced avocados, parsley, cherry tomatoes, and mayonnaise. Give everything a nice mix using a handled spatula.

Step 5

Pour in the lime juice and grated rind of the lime. This will give your dish a nice zingy flavor.

Step 6

Using a fork, flake the salmon and add it to the pasta salad. Sprinkle the whole lot with a little olive oil and salt and pepper to taste. Toss it all together.

Step 7

Serve the salmon avocado pasta salad on a bed of rocket leaves.

Homemade mayonnaise

To make your own mayonnaise, you will need the following ingredients:

  • 2 large eggs
  • 1 tsp of lemon juice
  • 1 tsp of Dijon mustard
  • 1 tbsp white wine vinegar
  • 1 pinch of kosher salt
  • 12 oz (355 ml) of grapeseed oil (or other neutral flavored oil)

Steps to make homemade mayonnaise:

  1. Add the eggs, Dijon mustard, vinegar, and salt to the food processor and process for about 1 minute.
  2. Scrape the sides of the food processor with a rubber spatula, turn the processor on again at medium speed and gradually add the oil.
  3. Once you have added all the oil, leave the processor on for a few more seconds, as you will see the mixture get thicker and emulsify.
  4. Add salt and pepper to taste
