  • 1 cup of almond milk (or other vegan milk)
  • 2 finely grated carrots
  • 1 tsp of ground cinnamon
  • 1/4 tsp of ground nutmeg
  • 2 tbsp of maple syrup (or honey)
  • 1 tsp vanilla extract

Step 1

Put the rolled oats, almond milk, grated carrot, cinnamon, nutmeg, and vanilla extract into a small saucepan and bring to a boil, while stirring frequently. Lower to medium heat and cook for another 6 – 7 minutes.

Step 2

Take the saucepan off the heat and stir in the maple syrup. You can add a little more dairy-free milk for your desired consistency.

Step 3

Pour the carrot cake oatmeal into serving bowls, add the cashew butter and dollop of coconut yogurt, and a pitch of extra-grated carrot.
